Autumn is my favorite time of year to bake. Pumpkin, apples, oats, cinnamon–all have such warm flavors. But I’m a mom so…things have to be simple and fast.
I’ve been making various granola recipes when I have the time. It’s easy and WAY cheaper than store-bought (why is it so expensive anyways?).
This simple pumpkin seed granola contains only five ingredients, and is SO EASY to make! You likely have most of the ingredients already, which is even better. Feel free to double the recipe for a larger batch!
Pumpkin seeds or pepitas can be found in the nuts and seeds section of most grocery stores or here. Peptias are high in iron, fiber, zinc, and magnesium. They are considered to be a healthy fat and protein source! You can absolutely eat them plain, but I find it more fun to combine them with other foods, like granola, trail mix or yogurt.

This granola can be eaten as a snack, with milk, on yogurt, used as a topping for peanut butter pancakes or waffles, or however you’d like! It’s totally customizable, too. Add nuts, dried fruit, or seeds if you’d like to–great if you have small amounts of odds and ends hanging around your pantry.
This granola contains both healthy fats, protein, and fiber which makes it a great way to add satisfying energy to any meal or snack.

How to involve your kids:
Kids can help measure, pour, and mix all the ingredients.
You may also consider letting them choose the ingredients needed at the store. This is a great way to learn about math, nutrition, and following directions.
When fully prepared and baked, they can then taste-test and choose how they would like to use it.

Simple Pumpkin Seed Granola
Ingredients
- 2 3/4 cup rolled oats
- 1/3 cup pumpkin seeds (pepitas)
- 1/4 tsp cinnamon
- 3 tbsp canola oil or melted butter
- 3 tbsp maple syrup add extra for sweeter granola
Instructions
- Preheat the oven to 350F.
- Mix all ingredients until evenly combined.
- Spread mixture evenly onto baking sheet covered with parchment paper.
- Bake 15 minutes. Then turn mixture. Bake another 10-15 minutes until slightly browned.
- Remove from oven and let cool.
- Store in airtight container.
