A few weeks ago my little family visited Chattanooga, Tennessee for an overnight stay to celebrate my son’s second birthday at the Tennessee Aquarium. We had the best time, and of course, enjoyed amazing food!

Much to my surprise, the restaurant we choose had a three-course kids menu. One of the appetizer choices was pimento cheese with crackers! SCORE! I was elated. My son, not so much.

Then, for breakfast the next day we visited a little restaurant in the middle of the city decorated in floral wall paper. The breakfast biscuit sandwich had a spread of—-your guessed it—- white cheddar pimento cheese. AMAZING. It was the best breakfast sandwich I’ve ever had.

I’ve been thinking about it ever since, so I got creative and made my own pimento cheese spread with white cheddar.

This white cheddar pimento cheese recipe is so simple, and makes a perfect snack or lunch addition.

First you shred 6oz of white cheddar cheese from the block.

Then add 3 tablespoons plain mayo, 2 teaspoons diced jar pimento peppers, 1/2 tablespoon Dijon mustard, and a tiny splash of worcestershire sauce with a dash of pepper. Mix and serve with crackers!

White Cheddar Pimento Cheese Spread

A southern staple with a twist.
Prep Time 10 minutes

Ingredients
  

  • 6 ounces white cheddar cheese (block)
  • 3 tbsp mayo
  • 2 oz diced pimento, drained
  • 1/2 tbsp dijon mustard
  • splash worcestershire sauce
  • dash black pepper

Instructions
 

  • Shred white cheddar cheese with grater.
  • Mix all ingredients until consistent in texture.
  • Serve with crackers.
